I vote 1...c5, but 1...e5 may be a better option if we have mostly beginners in this game.

Regardless, e5 is at least equal to c5 in my opinion.

1...e5 is a fine move. My only gripe is the game tends to be a bit less dynamic than the Sicilian. In the Ruy Lopez for example, it seems like white is playing for a win, while black is just trying to hold a draw.

still enough play in the ruy for black if they play a ruy. If they play any else we'll be having all the fun

Eh, the bishop's opening/Giuoco Pianissimo(sp) don't look particularly fun for black.
